My beloved husband has commented recently that lately I’ve been cooking all these elaborate meals, and he wondered why. The truth is I just wanted to show my family some love by cooking yummy things for them (like Beef Pot Roast and spinach-strawberry salad this past Saturday or roasting a turkey today, even though it’s not Thanksgiving) now that my morning sickness is history. And part of the reason for doing these kind of things was that those dishes produce A LOT of leftovers, and we love leftovers, especially when they are repurposed into something else. So, for instance, this week we’ll be eating a lot of turkey things as well as finishing up the last of the pot roast 🙂 I stocked up on turkeys when they were a great deal before Thanskgiving, so it’s a nice frugal way to add protein to your diet without breaking your budget, especially when you can stretch it to several meals.
Monday: italian-herb roasted turkey, roasted garlic and herb potatos, creamed califlower, and steamed carrots
Tuesday: turkey carcass soup with freshly baked whole wheat bread
Wednesday: turkey enchiladas, steamed broccoli
Thursday: pulled barbequed pot roast sandwiches, salad
Friday: turkey and citrus salad
Saturday: leftover buffet
Sunday: small snack, possibly just fruit and yogurt, since we have our small group in the afternoon and end up eating some snacks there.
